Chicken and Sausage Gumbo

Time: 20 minutes preparation                               Cooking time: 40 minutes

Description: I’m so lucky to work with a bunch of people who loves their food, this recipe is from my mate Alex, it’s super easy and super tasty too. Thanks Alex it’s one of my family favourite now.


  • Chicken tights ( no skin, with bone)
  • Smoky sausages ( from my local Polish shop )
  • Italian Green and red Peppers
  • Onions
  • Stock
  • Cajun Spices Mix


Make a Roux, it’s equal butter and flour, cook it until it’s brown and keep stirring, otherwise it will burn ! ( you don’t want that !), when it’s ready through your meat and brown each side for 5 minutes, and through your sausages cut in chunk, and stir, add you onion and peppers, add your Cajun mix (2 spoons) and stir again….. have a smell…

Yes, it smells Delish …

Pour the stock ( chicken stock) until the meat is covered.

bring to boil and leave it to cook for 30 minutes slowly at low temperature, and  look for the little bubbles ….

Serve with Rice and black beans ! yummy in my tummy !
