Description: This is my mum’s recipe, it’s a soup from Laos, where she comes from.
It serves 4/5 people so you can eat it twice during the week. You can keep it in the fridge for 1 week, just reheat slowly.
- Pork mince plus Pork ribs
- 1 Kefir lime (3 peels)
- 2 shallots
- 2 tsp red curry paste
- 1 lemongrass
- fresh chilli chopped to serve
- 1 can of coconut milk low fat
- fish sauce for seasoning
- Galanga root
Fried all the spices together in 2 tsp of groundnut oil, when you can smell a nice fragrance you can put your meat with the bones and stir, few minutes after you can put your shallots.
Add 1 litre of water and bring to boil, skimmed the fat from the meat and put to medium heat. After 20 minutes, you can put the coconut. Cook slowly at medium heat.
Serve with Rice noodle, fresh chopped gem lettuce, and fresh cucumber, few drops of chilli oil and few drops of fish sauce.
I always seasoned at the end so my little one can have some.
